Pesto Tuna Melt.


1 package of starkist albacore tuna in extra virgin olive oil (don’t be afraid of healthy fats people)
1-2 tbsp of greek yogurt depending on how creamy you like it.
1 tsp of curry powder
lots of fresh ground black pepper
sea salt to taste
pesto to taste– maybe like 1.5 tsp? just play with it.
lots of garlic powder
chopped sweet vidalia onion

Mix all together. Play with the ingredients. I never measure anything. The pesto in this is truly awesome. It gives it such a wonderful flavor!

I decided to take a whole wheat pita and make a tuna melt! I added the tuna salad on top, added some sliced tomatoes on top of that, and added some cheddar cheese (about 1/8 cup or so so half a serving) on top of that. Broil until cheese is melted.

This was a special meal. I felt like I was eating out in a restaurant! I love me a good tuna melt. Even better when it is healthier

  1. I used to make something like this for the kids. Used half an English muffin, topped by the tuna mixture, tomato on top, cheese over & popped under the broiler. Thanks for the reminder!
