Baked Taco Chicken.

For 2 servings-
2 organic chicken breasts pounded semi thin. (not that thin though)
1-2 tbsp of taco seasoning (I make my own)
1 tsp of extra virgin olive oil
1 serving of shredded cheddar cheese
1 cup of salsa ( I make my own with red vine tomato, red onion, cilantro, lime juice, and a little bit of garlic chili sriracha sauce) Use what you like jarred or homemade.
Sliced Jalapenos

Preheat oven to 350 degrees.
Pound chicken a bit (don’t overdo it) and coat in the taco seasoning on 1 or 2 sides depending if you like a little spice!
Add to a hot pan with 1 tsp of evoo.
Cook for 2 minutes a side and flip. So total 4 minutes on stovetop.
Remove from pan and add to a ovensafe dish.
Top each chicken breast with 1/2 cup of salsa.
Sprinkle cheese on top of salsa.
Add sliced jalapenos on top of cheese.
Bake off for 12 minutes or so. I also lo broiled it so the cheese would melt for about 1 minute.

Top with 1 tsp of plain greek yogurt for a healthy sour cream substitute!
