What you need- Per serving.
1 chicken breast pounded super thin. About 4 oz.
2 oz of no nitrate ham (i like black forest)
1.5 tbsp of eggwhite
1/8 cup of italian breadcrumbs
Salt and pepper to taste
1/2 serving of shredded mozzarella
Step 1 Preheat oven to 350 degrees.
Step 2 Pound chicken very very thin.
Step 3 Season with sea salt and pepper.
Step 4 Dip one side of chicken into eggwhite mixture. Let excess drain off.
Step 5 Add to a shallow dish of breadcrumbs. You only need to cover one side of the chicken in breadcrumbs.
Step 6 Layer ham on top of chicken.
Step 7 Sprinkle cheese on top.
Step 8 Carefully roll up breast.
Step 9 Use a few toothpicks to keep chicken rollup together.
Step 10 Bake in a oven safe dish for 12 minutes a side. 24 minutes total.
Step 11 ENJOY.
