What I used for 2 servings-
2 organic chicken breasts thinly pounded
1 tbsp of evoo
2 cloves of garlic
3 tbsp of chopped vidalia onion
6 large olives sliced
2 tbsp of egg whites
1/4 cup of bread crumbs (i only ended up using about 1/2 of that)
Preheat oven to 360.
In a small pan heat olive oil on 3. Add chopped garlic, onion, and olives. Saute for a few minutes until soft.
Pound chicken breasts very thin. Throw some black pepper on breasts. Dip into egg white. Let excess drip off.
Put into a shallow dish filled with bread crumbs. You only need to coat one side. Make sure entire surface on one side is covered with crumbs.
Take 1/2 of the olive mixture and place on one end of the chicken breast. Roll up carefully making sure mixture does not come out of the sides. Use toothpicks to help make it stay together.
Repeat with other piece of chicken.
