Makes 4 servings
2 cups of spinach
1 pint of cherry tomatoes diced
1 large shallot
3 cloves of garlic
1 tbsp of extra virgin olive oil
1 1b of turkey breast cutlet (should be 4)
In a large pan, warm olive oil on low heat. Sautee shallots and garlic in the pan. Once they begin to soften, add the tomatoes + spinach and let wilt.
Season turkey breast with sea salt and pepper.
In another pan I cooked the thin turkey breasts. I just added a drizzle of oil and put it medium heat. Cook until no longer pink, about 3-4 minutes a side. These are extra lean and filled with protein.
I added the spinach tomato mixture on top. Yum!
