We love Mexican food. The cilantro, sour cream, cheese, beans, fried tortillas, salsa. Uhm Yum.
I figured out my favorite mexican meal has about 4000 calories. That is just for 3 cheese enchiladas, beans and rice, chips and salsa. Totally insane. INSANE. Sometimes we would get two baskets of chips and salsa. Oh and don’t forget the queso.
Here is a healthier version of fajitas. I am convinced you can make ANY meal you love HEALTHY!
What you need-
1-2 small whole wheat tortillas. I use carb balanced!
1 serving of smart life ground beef crumbles (You could certainly use lean lean turkey or beef if you wanted, or chicken, or shrimp. Just make sure to measure the oz’s you are using)
1 serving of lower fat cheese.. I use cheddar veggie shreds brand
2 tbs of chopped red onions
1 tbs of chopped jalapeno
1/2 cup of chopped spinach
2 tbsp of greek yogurt for sour cream
2-3 tbsp of chopped tomato
1 tsp of taco seasoning
First- Chop all of the add-ins. Tomato, Onion, Jalapeno, Spinach. Place them in the fridge until ready to use.
Second- Cook meat. Add taco seasoning in.
Third- Warm up tortillas. You could do it in the oven, microwave, or on the stove top with a bit of non stick spray. I usually use the third option.
Fourth- Assemble fajitas. Split up the meat, add cheese, and toppings. Lastly add the “sour cream” aka plain yogurt.
Enjoy a Mexican feast for WAY less guilt!
Calories will depend on what you use exactly, but I estimate around 330 calories for 2 fajitas.
Fat under 5 grams, carbs around 30, and protein around 17.
