Caulimash!


My husband is a huge fan of cauliflower, but I prefer it’s greener cousin broccoli. Sometimes though you just have to give the husband some cauli! I didn’t want to just “steam” it so I decided to try a mash. Here is what I did, I am sure this has been done before-

Clean and trimmed 1 medium sized head of cauliflower.
Cut into bite sized pieces.
Added it to 1.5 cups of vegetable stock, 1 cup of water and 2 cloves of garlic
Boiled it on 6-7 heat until soft.
Added it to my vitamix with some garlic powder, salt, pepper, a splash of milk, and a tsp of earth balance.
Blended it until it got a creamy consistency.
Bam- Faux Taters!

Add whatever flavors you want. This is soo good. Tasted like garlic mashed potatoes to me! SOLD!
