1 tsp of evoo
1 4 oz chicken breast
1 cup of broccoli florets
1 tbsp of soy sauce (reduced sodium)
Ginger powder to taste
2 tbsp of chopped onion
2 garlic cloves
Red hot chilli pepper flakes if you like it spicy.
Heat evoo in a large sautee pan on low. Add diced garlic and onion to oil. Cook for a few minutes. Add broccoli florets after garlic/onions begin to soften. Season with ginger powder + reduced sodium soy sauce. Stir and cover at about 4 heat. Make sure to stir and check on this. You decide when the broccoli is done enough for you.
While the broccoli is cooking–Cut chicken into slices or cubes. Add to broccoli mixture. Stir. Let cook through.
This is a quick easy alternative to chicken and broccoli that you would find at a Chinese place. Totally good, filling, almost carb free, cheaper, and WAY BETTER for you!
