Slice eggplants lengthwise into 4 equal parts.
Toss with a bit of evoo (Extra virgin olive oil), and whatever seasonings you like.
Along with the eggplants, roast whatever toppings you want on the pizza. I am using garlic and tomatoes.
Slice up other toppings and place them with eggplant pieces.
Bake at 350 for 20 minutes. You can flip them halfway during the cooking process if you want. After 20 minutes, pull eggplants. Add a bit of cheese on top.
Melt until cheese is gooey.
Add the rest of the toppings.
Bam. Eggplant pizza!
