Cauliflower is so versatile! It belongs to the cabbage family, and is closely related to broccoli, kale, brussel sprouts, and bok choy. Vegetables in the cabbage family are known as cruciferous veggies. These types of veggies contain cancer fighting agents. Not to mention how yummy cauliflower is! It is mostly grown in California, and available all year long. My favorite way to eat cauliflower is steamed with a little bit of cheese melted on top. It also makes great “faux” mashed potatoes. Simple steam cauliflower and add it to the blender. Mash into a smooth consistency. Add some salt and pepper, or whatever else you want. It’s also very good raw. Add it to salads, or just eat it plain.
