Vegetarian Mexican Stuffed Peppers.


What I used for 2 servings-

2 bell peppers

1 tbsp extra virgin olive oil

2 morningstar burgers

3 cloves of garlic

5 small portabella mushrooms

1/2 can of black beans drained

1 tbsp of garlic chili sriracha

black pepper, cumin, garlic powder to taste

mozzarella to top (optional)

Preheat oven to 350. I cut the peppers in half, deseeded them, and placed them on a baking sheet.

During this time I heated up my 1 tbsp of oil, placed it on 3 heat and slowly warmed up my chopped garlic and mushrooms.

After that i crumbled in my faux burgers (you can use whatever meat you want) and incorporated that.

Next I added my sriracha, black pepper, cumin, and garlic powder. Stir for about 5 minutes or until heated through.

Add the black beans last. They will warm super fast.

Bring peppers out of stove. Use the filling and stuff them. Top with cheese. Continue baking until cheese is melted. You could also broil them if you want.

SO good!!! Healthy, and CHEAP!
