A spin on chicken salad.

I love “salad”. Chicken salad, tuna salad, shrimp salad, egg salad, any kind of salad basically. When people are watching their weight they tend to write these options off. Fatty mayonaise? No thanks. Fortunately I don’t have to give them up. I just started using plain greek yogurt for my mayonaise substitute. I can enjoy any kind of salad I want. Here is todays creation inspired by a pinterest recipe I saw. Click–


  • 2.5 oz of of cooked shredded chicken
  • 1-2 tbsp of fresh chopped cilantro
  • 1-2 tbsp of plain chobani greek yogurt
  • 1 tbsp of chopped onion
  • 1/2 a fresh lime squeezed
  • sea salt and pepper to taste
  • tons of cumin
  • 1/2 of a avocado

Combine all ingredients together. Serve on your favorite bread, stuffed inside of a tomato or avocado skin, or stuffed in between lettuce leaves. So yummy. The only fat that you are getting from this dish is the HEALTHY fat from the avocado. This would be lovely to serve at a party.
