Heat oven to 375. You need eggplant, extra virgin olive oil, whatever toppings you like, and your favorite cheese.
Cut eggplant into slices lengthwise. Coat both sides with a bit of extra virgin olive oil. For seasoning I used Mrs. Dash garlic blend. Use whatever you like.
Cut toppings for pizzas. I chose spinach, tomato, and mushrooms.
Get your grill nice and hot. Throw it on. Flip after a few minutes and cook until soft. If you don’t have a grill skip the step! You can make it in your oven.
Grilled eggplant mmm!
Time to assemble your pizzas. Add toppings and cheese. If you didn’t grill the eggplant, just add the toppings to the raw eggplant. You could use a bit of sauce if you like as the base also.
Bake until cheese and toppings are melted. About 10 minutes. If eggplant needs to be cooked through, bake for 20-25 minutes.

I love the idea of using veggies as the base of a pizza! I have tried portabello mushrooms and zucchini, but eggplant sounds fantastic!!
