Lemon cheesecakes. Lowcarb.
Preheat oven to 350.
Combine 8 oz of softened cream cheese, 1 egg, 1/4 cup sweetener (truvia) 1/2 tsp vanilla, and 1 squeeze of lemon.
Put into muffin liners and bake for 20 minutes. Cool completely. These taste best cold. Store in fridge.
Simple and they sound delicious! I wonder if you substitute fresh key limes if it would taste like a key lime pie?

and like 1 carb! lol 🙂 if you wanted to defat it you could use 1/3rd less cream cheese 😉 but since i am doing low carb i can haz all the fats!! 😀
