Low carb egg bake.


I had a ham steak just hanging out in my fridge that needed to be cooked. I wanted to somehow incorporate it into breakfast so I figured I would just make a giant egg bake. The best thing about egg bakes are that they are so versatile. You can literally use any ingredients you want. I decided to go with ham, asparagus, mushroom slices (not pictured) and cheese curds and mozzarella. Feel free to play around this. You want to do sausage and peppers? Do it. All vegetarian? Do it. My recipe went something like this-

1 bag of asparagus lightly cooked. I microwaved this bag for about 2 minutes. Once it was done I got the moisture out and cut it up into small pieces.

8 Eggs.

1 cup of cheese of choice. I used cheese curds and mozzarella.

Layer the asparagus, raw mushroom slices, chopped ham, and cheese into a non stick pan with sides. I sprayed some pan on the bottom as well.

Time to beat your eggs! I beat them with a tbsp of heavy cream to make them creamier. This is optional. I also added pepper and a bit of sea salt and garlic.

Pour egg mixture over the rest of ingredients.

Stir with a fork until everything is covered and even.

Bake in oven at 375 for about 20-30 minutes depending on how done you want it.

I served my piece with sour cream for 1 carb, and a tsp of  hot sauce.

I didn’t figure out the nutritional statistics, but the only carbs in this dish are coming from the veggies and sour cream. If you are not doing low carb, egg bakes are still a healthy breakfast. Just tailor it to whatever kind of style eating you are doing.
