I grilled up about 3 oz of chicken that I had marinating in a mango vinaigrette/ sliced jalapeno mixture. It turned out slightly sweet and spicy. Delish.
Used a bed of fresh organic romaine hearts and spinach + few chunks of avocado + tomato + onion + 1 tbsp of feta + 1/4 cup of roasted japanese sweet potato and added the grilled chicken.
Buffalo Chicken Salad for two.
Cooked chicken tossed in buffalo sauce. Served over organic romaine, organic carrots, organic celery, and organic yellow peppers. Topped with a bit of feta. Served with ranch yogurt on the side.
Check out dinner. I made a huge salad for two. With spinach, romaine, carrots, jalapeno, red pepper, onion, tomatoes, mushrooms, cucumber, and chicken.
I topped it with a bit of shaved parmesan and tossed it with a bit of organic and natural caesar dressing (6 grams of fat a tbsp).
My portion with Gasp a slice of multi grain french bread(I was low on calories). 😀

Starting Monday April 10 we will incorporate one salad into our daily meals for a week. That is right ladies and gentlemen. One salad every single day for a week!
Not the kind of salads that make you want to cry either! We are talking about tons of greens, healthy proteins, healthy fats, and whatever else you can come up with on these salads. I am excited because I love a good salad. It takes me forever to eat them, and they keep me feeling full!

So simple. Makes a huge bowl–
- 1 lime juiced
- 2 small hass avocado chopped
- 1 can of black beans
- 1/4 chopped jalapeno
- 1/4 chopped red bell pepper
- 1/2 chopped white onion
- handful of grape tomatoes halved
- sea salt and cumin to taste
- few tbsps of chopped cilantro
Drain black beans. Add all of the chopped veggies. Add squeezed lime plus sea salt and cumin to taste. Gently stir. Serve with chips or just as a plain salad.
Happy Thursday you guys! Today I ran to the grocery store and picked up a few things that I was running low on. Organic everything celery, lime, lemons, cucumbers, tomatoes, and granny smith apples.
I had a mean green this morning but instead of using kale I used romaine.
Worth it! Yum!
For my workout today I did weighted squats, crunches, leg lifts, and I also jumped into this freezing water for a super quick dip. Later this afternoon I will get a 60 minute walk in with the dogs as well.
We decided to go to Marathon for lunch.

I had this tasty tasty amazing tuna salad for lunch. Grilled tuna, black and white sesame seeds, pita points, orange slices, orange sesame glaze, and key lime dressing on the side.Headed home. Dinner? CARROT COLADAS!!

I love “salad”. Chicken salad, tuna salad, shrimp salad, egg salad, any kind of salad basically. When people are watching their weight they tend to write these options off. Fatty mayonaise? No thanks. Fortunately I don’t have to give them up. I just started using plain greek yogurt for my mayonaise substitute. I can enjoy any kind of salad I want. Salad day 2. The star of the show? Smoked Salmon.
In the mix-
- 2 cups of chopped romaine blend
- 2 oz of smoked Maine salmon
- diced carrot
- diced onion
- diced green pepper
- shaved parmesan
- 2 tbsp of yogurt based ranch dressing
Lunch. So good. I made a low fat honey mustard dressing with- 1 tbsp honey mustard, 1 tbsp or so of plain chobani, and a few bleu cheese crumbles. On my salad- organic chicken, field greens, red and orange bell peppers, shrooms, onions, tomatoes, grated squash.
Slip away to the islands with this yummy salad.
- 4 oz of cooked chicken (I just grabbed leftovers that I made earlier in the week).
- 1/2 a kiwi. Sliced. Leave the skin on. It’s got super powers.
- 1/2 a ripe peach. Sliced.
- 1/4 hass avocado. Diced.
- 1 tbsp of onion. Diced.
- 1 tbsp of salad dressing. Think honey mustard, creamy poppyseed, mango, or creamy poppyseed.
- 1-2 cups salad greens of choice.
Slice fruit + onion+ avocado. If you don’t have peaches or kiwi, think pineapple, raspberries, mango. You get it. Tropically. Add toppings on top of greens. Enjoy!
Ps- I know that these tropical fruits have a higher sugar content. Yes I eat them in moderation. No I don’t count fruit sugar as sugar. Fruit never made anyone fat!
