Not hummus hummus. I took a can of organic garbanzo beans, about 1 tbsp of organic coconut oil-u could use evoo if u want- about 1/4 cup of raw sunflower seeds, sea salt, garlic powder, 2 tbsp of nutritional yeast, 1/2 cup of fresh basil, and a few squirts of lemon. Blend. Yum! Great as a dip or on sammies. If you want it creamier, add more oil!
I modified this recipe from the Curious Country Cook. I used-
- 2 cups of grated squash with water pressed out
- 1 organic egg
- 1/4 cup of chopped onion
- 1/4 cup of homemade whole wheat bread crumbs
- salt and pepper to taste
- 1/4 cup of romano parmesan cheese
Preheat oven to 400. Grate squash. Squeeze water out until squash is dry. In a bowl add the onion, cheese, egg, breadcrumbs, salt and pepper, and the squash. Mix well. In a muffin container spray some pam and add filling. I got 6 nice sized servings. Bake for 15-17 minutes until tops are brown.
Per 3 muffins- 190 calories! So yummy and a great way to get rid of all that extra squash!
Oh my goodness. I love me some guac! Who doesn’t? Here is how I make mine!
I use Florida Avocado. California/Hass avocados are def more creamy, but I have to stay true to my Florida Avocado. They are still creamy, but contain much less fat! Feel free to use whatever avocado type you want.
1 Large Sized Avocados
1/2 cup of diced onion
1/2 cup of diced tomato
2-3 tbsps of fresh cilantro
1 tbsp of key lime juice
1-2 cloves of garlic
Sprinkle of cumin
Sprinkle of chili powder
Sea salt and pepper to taste.
Deseed avocado. Add to bowl. I usually just mash with a fork until avocado is equal parts creamy/chunky. Ha! Add the rest of the ingredients. Mix well! Serve with salads or with pita chips. Or eat it plain! Full of healthy fats. You must never feel bad eating avocado!!
ps the cumin is seriously AMAZING!! really made this dish of guac shine!
Shrimp is a great protein source. I wanted something different for lunch. I came up with shrimp cocktail. It was like I was at a fancy restaurant, without the insane prices!
For the shrimp-
6 large shrimp. Do not peel them or devein them. Simply boil them in hot water for 3 minutes. 3 minutes that is it! Remove shrimp immediately and add to ice cold water. The shrimp will stop cooking immediately. Once they cool, Peel and devein shrimp.
Served on a bed of greens with some homemade salsa.
In the salsa-
Sprinkle of salt
1 clove of garlic
For the cocktail sauce I simply mix the following–
Serve all together. This would be perfect for a party appetizer.
