Walnut coconut bark


I saw this on the web.

Line a baking sheet with parchment paper.
Add a few walnuts to paper.
Melt coconut butter for 30 seconds so it’s melted but still thick. I do it right in the glass it comes in.
Pour over top of walnuts.
Add more walnuts!
I added unsweetened coconut shreds on top along with one tsp of stevia as well.
You can use whatever toppings you like. I saw some people adding crushed up quest bars!!
Put in fridge to harden. About 15-30 mins.
Break apart and store in a container in fridge.
Low carb, healthy fats! Nice little treat! Literally took me 4 minutes to make!

Cream Cheese Balls!

Ingredients- 1 stick of unsalted butter, 1 block or 8 oz of regular cream cheese, low carb sugar of choice, nuts of choice.

Make sure butter and cream cheese are room temperature. Add to bowl.

After being in the fridge for one hour, roll into balls and keep in freezer. So good! The carb count will depend on how many nuts you use as it's the only thing with carbs.

Simple Lemon Cheesecakes. Low carb.

Lemon cheesecakes. Lowcarb.
Preheat oven to 350.
Combine 8 oz of softened cream cheese, 1 egg, 1/4 cup sweetener (truvia) 1/2 tsp vanilla, and 1 squeeze of lemon.
Put into muffin liners and bake for 20 minutes. Cool completely. These taste best cold. Store in fridge.

Oatmeal Banana Cookies! (2 ingredients).

That is it!  Shape cookies. Whatever size you like. I made 10 medium sized cookies.

OR you can add in other things. I added 2 tbsp’s of walnuts, and 1 tbsp of cinnamon. Mix well and shape. You could add raisins, chocolate chips, almonds, whatever you want.

Bake at 350 on a GREASED sheet for 15 minutes.

What a great little way to kill a sweet tooth. Oatmeal cookies in the morning? Why not?

Wow. All I can really say is wow. Want the best snack or dessert ever? Make this.

1 medium banana
1 tbsp of melted peanut butter
1 tbsp of crushed nuts of choice

Cut banana in half. Melt peanut butter. I simply used my stove on low heat. It only took about 30-60 seconds to start melting in a small little pan. Place skewer sticks or popsicle sticks through the banana. After peanut butter is melted, dip banana halves into it. Coat evenly. Place bananas on a plate. Top with crushed nuts of choice. I used sunflower seeds. After 90 minutes they are ready to go. They are cold enough, but not frozen enough to break teeth. If you want to break teeth, freeze them a bit longer 🙂

The calories and fat will all vary due to what you use, but trust me this is sinfully delicious and still healthy!

Banana Mango Ice Cream.

My husband has a major sweet tooth. I am more of a potato anything kind of girl, but sometimes you just need something sweet. What is a girl on a healthy lifestyle to do? I remember I use to be able to eat entire pints of ben and jerry’s ice cream. Actually I am pretty sure those pints were followed by pepperoni pizzas, doritos, and soda as well. I swore off eating the pints when i figured out that I was consuming over 60 grams of fat PER pint. CRAZY. Here is something I like to make in my vitamix. Creamy, Healthy, And certainly not 60 grams of fat.

1 small frozen banana
1/2 cup frozen mango chunks
splash of almond milk or coconut milk

Add to a food processor or blender. Blend until super smooth. You could add a bit of almond butter or peanut butter on top for a special treat. My husband would eat this by the truckload!

Pineapple Split.

1/4 a pineapple hollowed out
1/2 cup of strawberries
1/2 a banana
3 scoops of cottage cheese (i use 2%)

Cut pineapple into 1/4 wedge. hollow out the core part.
Fill it with 3 scoops of cottage cheese for the ice cream.
Stick 1/2 a banana in that bad boy.
Puree up some of the strawberries for the strawberry sauce.
Top with a few extra strawberry slices.

Yum!
