Mason Jar Salads.

Ok. So last year when the whole mason jar salads thing hit I was all over it. I went and bought a case of jars immediately. The neat salads packed into a glass jar was so appealing to me. Well turns out I am lazy because I never ended up making one!

Fast forward to last night when my friend Heather made a video about—you guessed it mason jar salads. I had to step my game up!

I decided to go with a taco salad. I used-

mason jarRomaine, Lean beef I cooked up with some homemade taco seasoning, fresh red bell pepper slices, homemade salsa, mexican cheese, black beans, and chobani.

It’s so simple. Just start layering. I put the “wet” ingredients on the bottom so I started with the salsa and worked my way up. mason3mason2

I will probably add a little salsa ranch later. Just shake and eat. Delish! Thanks Heather for the motivation.

Salad 4 of 7.

I grilled up about 3 oz of chicken that I had marinating in a mango vinaigrette/ sliced jalapeno mixture. It turned out slightly sweet and spicy. Delish.

Used a bed of fresh organic romaine hearts and spinach + few chunks of avocado + tomato + onion + 1 tbsp of feta + 1/4 cup of roasted japanese sweet potato and added the grilled chicken.


Solo Friday.

Hey guys! How are you? I am hoping great. Happy FRIDAY! My husband is out of town on business, so it’s just me and the animals. I am keeping myself busy though. Working out, eating right, and getting lots of work done.

I restarted the 30 day shred by Jillian Michaels. I am on day 4! The first few days were HARD. I was so so sore. Like honestly day 2 and 3 were killers. My thighs burned with every single movement. My arms? Same. Core? Same. I worked through it though, and I woke up this morning feeling so much better. I literally killed day 4 today. I am really proud of myself. I plan on doing level 1 for 10 days and 1 day off for rest. Level 2 for 10 days and 1 day off for rest and the same for level 3. So exciting!

I refueled after my workout with a shower, some egg-whites, a bit of plain greek yogurt + this awesome salad.

DSC00270I started by baking some WILD sockeye salmon. Just a bit of sea salt, cracked pepper, and a ton of dill. Into the oven at 350 for 20 minutes.

DSC00277After it baked I through it on top of some spinach, with shaved parmesan, cucumbers, red bell peppers, onions, a few croutons, and some natural caesar dressing on the side.

Salad Fever.

People always associate DIETS with SALADS. Like a bowl of iceberg, some carrots, a tomato slice, a radish, and a drop of some fat free horrible salad dressing. Since I am not on a diet I can load my salads up with tons of healthy options. I never get tired of salads! Here are some ideas. Click through to my salad gallery–

Turkey Club Salad.

What you need:
1-2 cups of italian blend salad
3 oz of light turkey
Sliced Mushrooms
Diced Carrots
Diced Onion
Diced Pickles
Wedged Tomatoes
50 g of Avocado
Sprinkle of Feta
2 tbsp of bleu cheese yogurt dressing

Healthy fats, lean protein, and tons of veggies. Excellent!

Chicken Club Salad with Olive Dressing.

Chicken Club salad (per salad)

  • 3.5 oz of rotisserie chicken
  • shredded carrots
  • diced onion
  • thin slices of part skim mozzeralla
  • tomato slices
  • 1.5 cups of mixed greens
  • 1 tbsp of bacon pieces

To make the olive dressing you just mix 1-2 tbsp of evoo, balsamic vinegrette, oregano, salt, pepper, and chopped olives. It makes the BEST dressing ever!!

Deviled Egg Salad.

Deviled egg salad for two.

2 hardboiled eggs chopped
1/2 cup of egg-whites cooked and chopped
3 tbsp of onion
1 tsp of yellow mustard
2-3 tbsp of plain greek yogurt
Chili Powder to taste
Salt to taste
Pepper to taste
Garlic powder to taste
1 tsp of horseradish
1 tsp of garlic chili hot sauce
1 tbsp of herbs of choice
Paprika for color
