Roasted Pepper Bombs.

I used grated squash, tomato, and mozzarella + all egg whites.

This is a great low carb breakfast. Scan the fridge. Pull out whatever random veggie/egg/cheese combinations you can come up with. Oh you need a bell pepper 😉 Oh and some seasonings!

Preheat oven to 350. Cut bell pepper in half. Remove seeds. In a bowl mix whatever egg/eggwhites, veggies, and cheeses you like. Fill peppers almost to the top, but leave a bit of room. Bake for 30 minutes or until filling is cooked through.
